I recently did a Wine and Cheese tasting for a wine group I’m involved with and we brought in a local cheese expert who is originally from Wisconsin. Her name is Kathy Guidi. I would suggest getting in touch with her as she can certainly give you some great advice. Her website is http://www.artisancheesemarketing.com and she really knows her stuff.
