Vegetarian Gourmet Food?

When ever i go to a fancy restaurant with my family, i always ask them to bring a vegetarian plate which usually consits of lots of different veggies all cooked very gourmet and it is delicious!
Does anyone know any good recipes or ways to cook vegetables so they are sorta gourmet and fancy if that makes any sence?

    Steam and then sautee in butter. Voila -fancy veggies.
    Did read details, and I took my recipes off. Don’t know who your PLEASE READ DETAILS was to - but that was kind of rude. I am assuming it is directed to the one who said to add meat - but still.

    cook your veggies in a little olive oil over low heat, then add your meat of choice; it should turn out just like chicken

    stuffed tomatoes…
    not a cherry and not a normal sized one..but somewhere in the middle…cut off the top and gut the tomatoe….
    take a cucumber slice in half….and scoop out the seed part…
    in a mixing bowl combine…
    diced cucumber
    feta cheese
    red onion
    stuff into tomatoes
    dressing
    olive oil
    red wine vinegar
    basil
    however you like it to taste
    drizzle over stuffed tomatoes…let sit 20 min
    i usually serve this w/ warm bread and fresh herbs in olive oil…makes for a great meal…

    I like stuffed vegetables:
    Stuffed mushrooms:
    * 12 whole fresh mushrooms
    * 1 tablespoon vegetable oil
    * 1 tablespoon minced garlic
    * 1 (8 ounce) package cream cheese, softened
    * 1/4 cup grated Parmesan cheese
    * 1/4 teaspoon ground black pepper
    * 1/4 teaspoon onion powder
    * 1/4 teaspoon ground cayenne pepper
    1. Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray. Clean mushrooms with a damp paper towel. Carefully break off stems. Chop stems extremely fine, discarding tough end of stems.
    2. Heat oil in a large skillet over medium heat. Add garlic and chopped mushroom stems to the skillet. Fry until any moisture has disappeared, taking care not to burn garlic. Set aside to cool.
    3. When garlic and mushroom mixture is no longer hot, stir in cream cheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Mixture should be very thick. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on prepared cookie sheet.
    4. Bake for 20 minutes in the preheated oven, or until the mushrooms are piping hot and liquid starts to form under caps.
    (From allrecipes - I tried this recipe once and it turned out quite good)
    I also like stuffed zucchini:
    I just scoop out the middle of 2 or 3 medium sized zucchini and chop it up. I saute it in the pan with olive oil, a half an onion chopped, a large tomato (skinned and cored and diced) and a teaspoon or so of pureed or minced garlic. Add salt and pepper to taste and a little basil or oregano if you like it, stuff the mixture back into the zucchini, top with mozzarella, and bake them in a pan til the cheese is bubbly. Eat them.
    Roasted veg are pretty nice too. Chop up an onion, a yam, some carrots, and some turnips into large chunks, toss them in a mixture of 3 tablespoons cooking oil and 3 tablespoons of balsamic vinegar, and dust with a little rosemary and thyme. Dump into a roasting pan that’s been oiled down, and pop in a 375 degree oven for about an hour.
