In central California, I would like to offer gourmet sandwiches available on the weekends. I plan to use someone else’s commercial kitchen to pre-prepare them. What additional safety and health license do I need? And who do I get it from?

Well you’ll need a food license from the regional inspector from the Department of Health. Call City Hall and ask how to get a hold of them. That’s how I did it. I know that wineries have a bit of a more complicated issue here in CA with serving food. But it sounds like you have your ducks in a row so far with the off-site kitchen. Come to think of it, your winery must be health-inspected, you should have the name of the division on a permit somewhere. Call them too as they’ll have info. If it worked like it did for me, the health inspector will just want to see the kitchen you’re renting to make sure everything is up to code and have all the safety in place. Then you just fork over cash and they hand you a food license. Good luck!
