I’m looking for a cookbook that has some really good gourmet vegetarian recipes for appetizers, main dishes and sides. I really love Southwest/Mexican food like burritos and empanadas, but I also like Italian and Asian.
Can anyone recommend some really good cookbooks with great-tasting, healthy, gourmet, vegetarian recipes?

I am not looking for gourmet food or alternative recipes. I like large portions of down to earth good mexican. Like a burrito or chimi changa that fills the whole plate. Lots and lots of cheese as well. Any help appreciated!
