Because it’s exotic (not your normal everyday fare), often hard to attain, and in some instances — such as eating blowfish — can result in death, so is dangerous/thrilling to eat.
BTW, don’t knock it till you’ve tried it. I LOVE all sorts of exotic dishes….there are worlds of taste to be explored out there!
